Squash Blossom Fritters

Squash Blossom Fritters are a delicious summer appetizer. I use to stuff squash blossoms, and though I still love them stuffed, they are far easier and delicious made into fritters.

Directions

In a large bowl add add the squash blossoms, flour, salt and basil.

Toss the ingredients together.

Gently mix in the egg.

Form the fritters into 6 equal sized balls and gently pack them together so they don’t fall apart.

Add 1/2 cup vegetable oil to a large fry pan.

Heat on medium high heat until the oil is hot enough to fry the fritters (temperature should reach around 350 degrees).

Place the fritters in the pan and cook for 10 minutes on one side and 10 minutes on the other side.

1 cup squash blossoms, chopped

1/2 cup AP flour

1 tablespoon basil, chopped

2 eggs, whisked

1/2 teaspoon salt

1/2 cup vegetable oil
