Grilled cheese with honey

Honey, apples and cheese? Not only do these three ingredients work well together, they taste amazing combined together in a grilled cheese sandwich.
This recipe will leave you wondering if it should be included as the appetizer, main course or dessert section of a menu. The combination of sweetness, saltiness and sourness is indescribable. After a party, I loaded up the leftovers from my beautiful cheese platter and stored them for later use.
The next day it was pouring down rain and all I wanted to do was stay in, watch movies and eat grilled cheese sandwiches and tomato soup. To my dismay, there was no white bread, cheddar cheese or tomato soup available in my cupboards. I began rummaging through my kitchen and found the leftovers from the night before and went to work and came up with one of my favorite recipes yet.
Directions
Preheat the oven to 350 degrees.
Heat a large sauté pan with ½ the butter and ½ the olive oil then place 4-5 slices of the muesli bread into the pan.
Brown both sides and place on a cookie sheet. Brown the rest of the bread slices and place them on the cookie sheet as well.
Next, layer 4 pieces of muesli toast with baby Swiss, sliced apples, thyme leaves and lightly drizzle with honey and top with another piece of toast.
Place all of the grilled cheeses in the oven for 6-8 minutes or until the cheese begins to melt.
Serve.

8 slices muesli bread
3-4 tablespoons unsalted butter
1 tablespoon olive oil
8 slices of baby Swiss cheese
2 sprigs of thyme leaves
1tablespoon of honey
1 green tart apple
