Green Goddess Chicken Salad

Directions
Heat a grill to medium high heat.
Season the chicken with salt and pepper and spray with nonstick spray.
Place the chicken on grill pan cook the chicken for 25 minutes (rotating and flipping through out the 25 minutes), or until cooked through.
While the chicken is cooking add lettuce, cucumbers, tomato and almonds to a serving dish.
Remove from the grill pan, let cool, and cut into thin slices.
Add to a blender the Italian parsley, basil, oregano, shallot, white wine vinegar, mayonnaise, lemon juice, and salt to and blend well.
Pour the salad dressing over the salad.
Garnish with basil and serve.

2 boneless and skinless chicken breasts
2 heads romaine lettuce chopped
1/2 Persian cucumber sliced
1/4 cup roasted unsalted almonds
1/2 cup baby tomatoes

1 ¼ cup Italian parsley
2 cups basil, chopped
1 teaspoon dried oregano leaves
1 tablespoon shallot diced
1/4 cup white wine vinegar
1 lemon juiced
½ cup of mayonnaise
1 tablespoon lemon juice
¼ teaspoon Kosher Salt
