Strawberry Letter Aperol Cocktail

Aperol is an Italian aperitif that brings a bright and flavorful zing to this cocktail.


  1. In ice-filled cocktail shaker combine shrub, Aperol, and rosé. Cover; shake well until very cold. Strain into ice-filled goblet. Top with seltzer. Place strawberry on glass rim.


*Strawberry Shrub:


  1. In medium non-reactive saucepan combine mashed strawberries, sugar and red wine vinegar. Bring to boiling over medium high heat. Reduce heat; simmer 10 minutes. Remove from heat. Let stand 1 hour. Strain; discard fruit. Cover; store in refrigerator up to 1 week. Makes 1 1/2 cups.






Ice cubes

1 1/2      fluid ounces Strawberry Shrub (see recipe below)

1          fluid ounce Aperol

3          fluid ounces Rose La Vielle Ferme Rosé

1          fluid ounce seltzer

1          Fresh strawberry, for garnish

3          cups strawberries, lightly smashed

1 1/2      cups sugar

3/4        cup red wine vinegar
