Directions

Add oil and butter to a sauté pan and heat on medium high.

Season chicken breasts with salt and lay them presentation side down the pan.

Sear for ten minutes or until golden brown and then flip.

Cook for another ten minutes and then remove and set onto a plate.

Add garlic and sun-dried tomatoes into the pan and sauté until aromatic and lightly brown, about 3 minutes.

Mix in tomato paste, thyme, chili flakes and chicken stock to the pan.

Bring mixture to a boil and then reduce the heat to a medium heat.

Simmer for 10 minutes, then add cream the cream and cheese.

Reduce the liquid by half and add in the chicken and cook for another 5 minutes.

Serve.

2 boneless and skinless chicken breasts

2 garlic cloves sliced

¼ cup sun dried tomatoes

½ teaspoons chili flakes

¼ teaspoon dried thyme

1 tablespoon tomato paste

½ cup chicken stock

½ cup heavy cream

¼ cup fresh grated parmesan cheese
