Lemon thyme potatoes

Lemon thyme potatoes pair well with grilled steak or anything with bold flavor.
Directions
Fill a pot with cold water.
Add 1 teaspoon of salt, shallot and half of the thyme to the pot.
Next add the potatoes to the pot.
Bring the potatoes to a boil and then turn it down to simmering.
Simmer the potatoes for 45 minutes.
Remove the water from the potatoes.
Zest the lemon and add it to the potatoes.
Toss the potatoes with the zest and the juice from the lemon.
Season the potatoes with salt and pepper.
Serve with a sprig of thyme.

1-pound fingerling potatoes
1-teaspoon salt
1 large shallots, peeled and cut in half
1 small bunch of thyme
1-teaspoon olive oil
1 lemon juiced
Salt and pepper to taste
