Chicken Parmesan

Chicken Parmesan is the ultimate comforting classic—crispy breaded chicken topped with rich marinara and melted cheese. Served warm and hearty, it’s a dish that feels like home with every bite. A timeless favorite that’s as satisfying as it is delicious.

Preheat the oven to 400°F.
Trim the fat from the chicken.
Place the chicken breasts in a Ziplock bag on the cutting board and use a meat pounder and pound the chicken until the chicken is the same thickness all over.
Set up one cake pan with flour, a cake pan of whisked eggs, and a cake pan with breadcrumbs.
Season the chicken with salt and rub into the meat.
Dip the chicken breasts into flour, then egg and then to the breadcrumbs*. Generously coat them on both sides.
Heat a large sauté pan over medium high heat. When hot, add half the butter and oil, and heat until hot. Fry a few pieces of chicken at a time, careful not to crowd the pan.
Brown on both sides about 7 minutes, and then remove the chicken from the pan and place in a baking dish.
Repeat cooking steps until all the chicken is browned.
Cover the chicken with tomato sauce and slices of fresh mozzarella. and bake until lightly golden brown, about 20 minutes.
Remove the chicken breasts and place them on a beautiful serving dish and sprinkle them with fresh basil and grated Parmesan cheese (optional).
*Breadcrumb Directions
Toast the eight pieces of bread and let cool completely.
Using a food processor, grind them into breadcrumbs.
Pulse in the oregano, basil, Parmesan, salt, and pepper.
Set aside until you’re ready to use them
*Tomato Sauce Directions
Add olive oil to a medium sauce pot and heat to medium high.
Add garlic and season with salt, mix.
Add basil and mix.
Add tomato paste and cook for 2 minutes.
Add tomato sauces and mix well.
Add ¼ cup water and mix.
Simmer for 20 minutes.
Season with Kosher salt and pepper.

2 cups fresh sliced mozzarella cheese
2 teaspoons freshly grated Parmesan cheese
1 tablespoon fresh basil leaves chopped
½ teaspoon kosher salt
¼ teaspoon freshly cracked pepper

2 cups plain breadcrumbs
1 ½ teaspoon dried oregano
1 tablespoon dried basil
½ cup freshly grated Parmesan cheese
½ teaspoon kosher salt
¼ teaspoon freshly cracked pepper
Tomato Sauce Ingredients
1 tablespoon olive oil
2 garlic cloves sliced
¼ teaspoon Kosher salt
¼ cup chopped fresh basil
2 tablespoons tomato paste
1 15-ounce can tomato puree
1 cup San Marazano peeled whole tomatoes
