Fettuccini Alfredo

Directions

Melt butter, cream and cheese together in a small saucepan over low heat.

Boil water.

Add pasta and cook on medium high for 12-14 minutes until you reach desired doneness.

Strain and set aside.

Simmer sauce for 10-15 minutes or until thick.

Cook pancetta in a sauté pan on medium high heat until crisp.

Drain grease into a lined bowl with a paper towel.

Set aside.

 Season with salt and pepper.

Add sauce to pasta, and pancetta and serve.

¾ cup unsalted butter

1 cup heavy cream

2 cups freshly grated Parmesan cheese

1 teaspoon kosher salt

3 cranks freshly ground black pepper

1 pound fettuccini

¼ cup pancetta
