Butter Lettuce Salad with Cherries, Peaches, and Blackberries

Summer fruits are an exquisite part of this salad, however the dressing and lettuce will do just fine alone. Its delicious and tangy, a delicious way to start a meal.

Directions

  1. For Champagne Vinaigrette, in small bowl, whisk together olive oil, vinegar, lemon juice, and parsley. Season to taste with salt and pepper.

 

  1. For Butter Lettuce Salad, in a large bowl combine lettuce, cherries, peaches, and blackberries. Drizzle salad with vinaigrette; lightly toss to coat. Season with salt.

 

  1. Plate salad; top with crumbled blue cheese, parsley, and pepper.

 

Ingredients

Champagne Vinaigrette

 

1/3        cup olive oil

1/4        cup champagne vinegar

1          tablespoon fresh lemon juice

1          tablespoon finely chopped fresh Italian parsley

Butter Lettuce Salad

 

2          heads butterhead Boston lettuce, torn into bite-size pieces (10 cups)

2          cups fresh sweet cherries, pitted and halved, or red or purple plums, pitted and quartered

2          cups sliced unpeeled peaches

2          cups fresh blackberries

Kosher salt

3/4        cup crumbled Stilton or Roquefort cheese

3          tablespoons coarsely chopped fresh Italian parsley

Freshly ground black pepper
