Stuffed chile relleno

Chili rellenos are my weakness, no seriously. They are hot spicy and unbelievably delicious. This recipe is vegetarian if you can believe it, but even the biggest meat eater will go crazy because of it’s bold and full flavor. When I began testing this recipe I cooked it multiple different ways testing out peeling versus not peeling, baking versus only deep frying, etc. to come up with my favorite outcome. Thus this amazing stuffed chile relleno was born!
