Grilled rosemary pork

Sometimes dinner needs to be really simple like this grilled rosemary pork tenderloin. It works well for dinner as is the first night and then the second night you can turn it into a barbq pork sandwich.

Ingredients

  • 1-thin pork tenderloin (found at Trader Joes)
  • 1-tablespoon grape seed oil (or extra virgin olive oil)
  • 6-8 rosemary sprigs
  • Salt
  • Fresh cracked pepper

Directions

  1. Rub 5 rosemary sprigs with your fingertips.
  2. Once they rosemary smells aromatic add it to a large Ziploc bowl.
  3. Next, add the grapeseed oil or olive oil to the bag with the rosemary and cover the rosemary with the oil (this is all so known as cold infusion).
  4. Clean the pork with cold water if it needs it and cut the fat from the tenderloin.
  5. Cut the pork into 3 or 4 equal pieces.
  6. Add the tenderloin to the bag and allow it to marinate for 1-2 hours.
  7. Heat a large grill pan.
  8. When it’s hot add the pork tenderloin pieces and cook it for a total of 20 minutes, but make sure to rotate it about every 8 minutes.
  9. When it’s cooked to 140-142 remove it from the fire and allow it to rest 5-10 minutes.
  10. The individual pork tenderloins can be left whole for your guests or you can pre-slice them into five or six pieces.
  11. Serve them with fresh rosemary.

This rosemary grilled pork tenderloin is a delicious recipe and can be serve all year round. It also goes well with our risotto and roasted vegetables.
