Pistachio and cherry granola

Homemade granola is very easy to make and you can add your favorite ingredients when you make it from scratch. I love pistachios and cherries and I wanted to incorporate them into this recipe. If you aren’t interested in shucking your own pistachios you can buy them shucked or you can change it to a different kind of nut like almond, cashew or walnut.

Directions:

  • Preheat the oven to 325 degrees.
  • Mix together honey, oats, pistachios, vanilla and salt.
  • Toss the mixture together.
  • Spray a cookie sheet with non-stick spray and spread the granola mixture over the tray.
  • Bake the granola for 10 minutes and then flip the granola to prevent it from burning on one side.
  • Continue to bake the granola for another 7-8 minutes or until it’s golden brown.
  • When the granola is finished pour it into a metal bowl and then mix in the cherries.
  • Add 1 cup of yogurt to each bowl (4 bowls), top it with granola mixture and if you desire extra sweetness drizzle honey over the top.
  • Serve.
