This recipe is all about lemons and chicken! It’s tangy with a hint of sweet. As always, good chicken will make this an even better dish.
Make this dish ahead of time and keep it in the fridge to enjoy later.
Directions
- Preheat the oven to 350 degrees.
- Dry the chicken breasts.
- Add butter and olive oil to a large sauté pan.
- Season the chicken with salt and pepper.
- When the liquid is hot then add the chicken breasts to the pan, presentation side down.
- Sear the chicken on a medium high heat for 8 minute.
- Half way through cooking the chicken add the shallots, thyme and sliced lemons to the pan.
- Then at 8 minutes flip the chicken and add the lemon juice and water.
- Place the entire pan in the oven and cook it for 16 minutes
- When the chicken has cooked through remove the chicken from the pan and place it on individual plates or a platter.
- Then add the honey, thyme, butter, fresh lemon slices and parsley to the pan. Cook the sauce for 2-3 minutes and then poor it over the chicken.
- Serve.
