Green beans with almonds

Simple is better when it comes to making your Thanksgiving dinner and these simple green beans with almonds are a perfect dish to accompany all of your other traditional favorites.

Avoid buying damaged beans or ones that are flimsy and soft. Beans should smell fresh, sweet and grassy.

Don’t wash them until you are ready to cook them. Water causes them to break out in gray and black spots.

Salt your boiling water because the green beans react to the salt by turning a brilliant green color. Cook them in boiling salted water for four to five minutes. Once they are soft but still have a slight crunch, remove them from the water and place them into an ice bath for a few minutes to stop the cooking process.

Green beans can be served hot or room temperature, and can be precooked ahead of time to make cooking on Thanksgiving a bit easier.

Directions:

Green beans: Wash and dry the beans under cold water. Cut the growing ends off of the green beans and place them on a cookie sheet.

Preheat the oven to 300 degrees. Spread the almonds on to a cookie sheet and toast for 10 minutes (watch the almonds, they can burn quickly). When they are finished set them aside.

Next bring a pot of salted water to a boil and then add the green beans into the pot.

Cook for 4-5 minutes.

Poor the water from the pot and then remove the green beans and place them back on the cookie sheet. Heat the pot with olive oil and add the almonds to the pan, season them with salt and pepper. Then add the green beans to the almonds. Season the green beans with salt and pepper.
