Tzatziki is a simple and yet delicious dipping sauce that goes with salmon, pita bread, lamb, etc. Its use has endless possibilities.
As a young child I remember my mom would served a similar version with poached salmon during the summer and though I didn’t love salmon at the time I did love that sauce. It was perfect on hot Oklahoma summer days when you didn’t want to eat anything. Later when my husband and I went to Greece it was exciting to see a new take on a sauce that I had loved for years.

Directions
- Wash and dry the cucumber.
- Shred the cucumbers into a large bowl (leave the peel on).
- Add the yogurt, lemon juice, half and half, oregano and basil to the bowl.
- Mix everything well and season with salt and pepper.
- Let sit for an hour and then serve with hot pita bread.
