Every Christmas I try and come up with a few new cookie ideas for the oh-so-familiar cookie exchange parties or the inevitable cookie gifting, and this year the cookie of choice was a blondie brownie.
Not a cookie you say, well technically you are right but as I was testing this brownie I realized it’s not too far from a giant cookie. Expect this blondie to be crisp on the outside, soft on the inside with a perfect amount of sweet.
I created these for my son’s schools bake sale and jazzed them up with melted chocolate, M&M’s, snow caps and Kit Kat bars. Delicious!
Ingredients
- 1 stick of unsalted butter, softened
- 2 cups of flour
- 1 tablespoon baking soda
- ¼-cup canola oil
- 1-cup brown sugar
- 1 cup white sugar
- 2 eggs
- 2 teaspoons vanilla
- ½ teaspoon salt
- 1 cup chocolate chips
Christmas blondies
- 1 cup chocolate chips
- ½ cup M&M’s
- ¼-snow caps, halved
- 1-cup Kit Kats, halved
Directions
- Preheat the oven to 350 degrees.
- In a large bowl mix together the softened butter, vegetable oil, brown sugar and white sugar until well incorporated.
- Add in the eggs and vanilla then mix until it is a smooth consistency.
- Add in the baking powder, salt and flour.
- Mix well.
- Then add the chocolate chips to the bowl and fold them into the mixture.
- Spray a quarter sheet pan with non-stick spray and press the dough into the pan.
- Smooth it across the top and bake in the oven for 30 minutes.
- Remove from the oven allow it to cool for 10 – 15 minutes and then cut into squares.
