Directions
- Fill a pot with cold water.
- Add 1 teaspoon of salt, shallot and half of the thyme to the pot.
- Next add the potatoes to the pot.
- Bring the potatoes to a boil and then turn it down to simmering.
- Simmer the potatoes for 45 minutes.
- Remove the water from the potatoes.
- Zest the lemon and add it to the potatoes.
- Toss the potatoes with the zest and the juice from the lemon.
- Season the potatoes with salt and pepper.
- Serve with a sprig of thyme.
