Where to find the BEST chicken fried steak and fried chicken was the topic of conversation when I was growing up in Oklahoma. It seemed every picnic or cafeteria (yes I said cafeteria) served delicious chicken fried steak and fried chicken and they never had enough.
I’m on a quest to embrace my Oklahoma roots and celebrate the foods that are prevalent in the state. This is my classic chicken fried steak recipe and though I offer a fried chicken recipe on HMFG it’s not classic to Oklahoma cuisine but it’s still delicious. And if you’re interested here is the link to the fried chicken recipe.
Directions
- Cut the steaks into 4 pieces if the need to be cut.
- Add the flour and paprika to a plate.
- Then use a fork and mix the flour and paprika together well.
- Next, dip the steaks into the lightly beaten egg.
- Then coat the steaks with the flour mixture.
- Next, add the steaks back to the egg mixture and coat the steaks in the flour mixture again.
- Heat the oil to a medium heat.
- When the oil is hot, add the steaks into the oil one at a time (unless you have a large enough sauté pan or fryer to handle both steaks at the same time) into the oil.
- Fry each steak for 2 minutes each side or until both sides are golden brown.
- Sprinkle salt and pepper on the finished fried steaks.
- Serve with red skinned mashed potatoes and gravy (recipe to come).
