Homemade pasta is amazing, but takes practice. It’s very easy once you know how, but knowing how takes effort. For help check out my recent post of FAQ’s on common pasta mistakes and solutions and if all else fails, leave a comment on this post and I will respond to you as quickly as possible. One last thought, fresh pasta is worth the effort. Keep trying until you get it right.
Directions:
- Mix semolina, AP flour and salt together.
- Create a well and add the egg to the well.
- Mix the egg and flour mixture with a fork.
- Add water to the pasta dough.
- Form the pasta dough into a ball.
- Add flour to a cutting board flatten your dough so that it will fit through your pasta machine.
- Run the pasta dough through the machine several times, add flour if the dough is too sticky.
- Each time you run the dough through the largest setting fold the dough into thirds.
- When the dough is smooth and of a good consistency begin decreasing the opening of the pasta machine.
- As you run the dough through the machine add more flour if you need it and cut the dough into smaller pieces if it becomes to long for you to handle.
- When the dough is at your desired thickness cut it into the desired shape-linguini, angel hair, lasagna, etc.
- Cook your fresh pasta in boiling water for about two minutes.
