Why Is It Called Cowboy Caviar?
A Playful Name for a Fresh Southern Staple
If you’ve ever come across a vibrant bowl of Cowboy Caviar at a summer picnic or potluck, you’ve likely wondered: what’s with the name?
Despite the “caviar” in its title, there’s not a fish egg in sight. Cowboy Caviar is a zesty, colorful salad made with black-eyed peas, black beans, corn, peppers, tomatoes, onions, and a tangy vinaigrette. It’s scooped up with tortilla chips, served as a side dish, or even spooned over grilled meats. Think of it as salsa’s heartier cousin—with a name that adds a wink of humor.
Directions
In a large bowl add the corn, tomato, black beans, onion, cilantro, garlic, and lime juice. Let it sit for an hour.
Serve.
