Classic Tzatziki

Servings: 2-3 servings

Tzatziki is a simple and yet delicious dipping sauce that goes with salmon, pita bread, lamb, etc. Its use has endless possibilities.

As a young child I remember my mom would served a similar version with poached salmon during the summer and though I didn’t love salmon at the time I did love that sauce. It was perfect on hot Oklahoma summer days when you didn’t want to eat anything. Later when my husband and I went to Greece it was exciting to see a new take on a sauce that I had loved for years.

Directions

Wash and dry the cucumber.

Shred the cucumbers into a large bowl (leave the peel on).

Add the yogurt, lemon juice, half and half, oregano and basil to the bowl.

Mix everything well and season with salt and pepper.

Let sit for an hour and then serve with hot pita bread.

Ingredients

¼ cup of grated Hot House cucumbers

1 cup 2% Greek yogurt (Faige)

1 ½ lemons juiced

¼ cup of half and half

½ teaspoon basil

¼ teaspoon oregano

salt and pepper to taste

Serve with fresh hot pita
