Chicken and artichoke pasta

Servings: 2-3 servings

 

How is this a fast easy meal during the week? Cook enough chicken on Sunday to last for a few days and on let’s say a Tuesday when you have to make dinner all you have to do is cook pasta, cut some tomatoes, cube some already cooked chicken, open a can of artichoke hearts and basically your done.

The best part about this pasta recipe, is if someone doesn’t like one of the ingredients you can always leave it out and this dinner will still be good.

 

 

Directions

In a large non-stick sauté pan add 2 tablespoons of butter. Add the artichoke hearts and place a cut side down.

Sear the artichokes for 2-3 minutes or until the artichokes are lightly brown.

Then add the grilled chicken to the sauté pan and toss everything together (if you don’t know how to toss the food in the pan then just stir, but be gently because you don’t want to separate the artichoke leaves).

Next add the cooked pasta, tomatoes, lemon zest, lemon juice, good olive oil and the last tablespoon of butter.

Season the pasta with salt and pepper and mix everything together.

When you serve the pasta top each plate with a little bit of the grated Parmesan cheese.

*Grilled chicken is very simple, all you have to do is season the chicken with salt and pepper. Then lightly coat it with a nonstick spray, so the chicken doesn’t stick to the grill. Next cook the chicken on both sides for 6 minutes, each side for a total of 12 minutes (time may increase depending on the size of the chicken breast).

2 cups of cooked rotini pasta

1 ½ cups grilled chicken*

3 tablespoons unsalted butter

1-tablespoon good olive oil

1-cup artichoke hearts, quartered

1 lemon, zested

1 1/2 lemons, juiced

½ cup halved grape tomatoes

¼ Parmesan cheese

Salt and pepper to taste
